THAI GREEN CHICKEN CURRY

INGREDIENT: PER PERSON
0.5 Piece Chicken
1 Can Coconut milk
5 Gloves Garlic
2 Piece Green chilli
1 Piece Shallot
1 Thump Piece galangal
1 Bundle Fresh coriander
2 Piece Fresh lemongrass
0,5 Tsp Ground cumin
0.5 Tsp Ground white pepper
3 Tbsp Fish sauce
1 Tbsp Shrimp paste
1 Tsp Lime juice
1 Tsp Brown sugar
3 Piece Lime leaves
Pandan leaves
METHOD OF WORKING:
Blend galangal, green chilli, coriander, lemon grass, shallot, garlic, ginger.
Sautéed all the blend items with oil and pandan leave, shrimp paste and make it light brown. Add coriander and cumin sugar and season the curry.
Remove from heat and blend again, strain the curry.
Sautéed the season chicken, add the green curry paste, lime leaves and the coconut milk and let the chicken simmer in the sauce for 40 minutes.
Note : more yummy if you add some vegetable like green eggplant on it.
